Wat is Cognac?
Cognac is een karaktervol wijndistillaat, altijd afkomstig uit de regio Cognac. De naam Cognac komt van het provincieplaatsje aan de rivier de Charente, ten noordwesten van Bordeaux. De wijn wordt dubbel gedistilleerd in Alambic Charantais ketels en moet ten minste 40% alcohol bevatten. Het distillaat, de “Eau de Vie de Vin” wordt vervolgens minstens tweeënhalf jaar gerijpt op eiken vaten. Alleen als het aan al deze voorwaarden voldoet, spreken we van Cognac.
“In Nederland noemden we het brandewijn, omdat de wijn “gebrand” werd en de Engelse verbasterde dat tot Brandy. Met de Franse oorsprong, de druif als basis, de rijping op houten vaten én de strenge wetgeving zou het zomaar een wijn kunnen zijn.”
Italiaanse Roots
Cognac wordt vrijwel altijd gemaakt van wijn van witte druiven. De Ugni Blanc, ook wel bekend als de Saint Emilion neemt 90% van de Cognac productie voor zijn rekening. Het is een kleine druif met een hoog zuurgehalte en qua smaken pallet weinig inspirerend. Het distilleren zorgt voor een karaktervolle versterkte wijn met veel aroma’s. De oorspronkelijke benaming is de Trebbiano. Overgebracht vanuit Italië, waar de druif snel populair werd in Cognac, Armagnac en Charente.
Rijping en leeftijd
De rijping op eikenhout is een belangrijk onderdeel voor de specifieke eigenschappen van Cognac. Meestal bestaat een Cognac uit meerdere Cognacs van verschillende leeftijden en/of districten. De leeftijd staat voor hoe lang de Eau de Vie op het hout gerijpt is en de leeftijd van de jongste Cognac uit het mengsel is bepalend voor de aanduiding op de fles. Als het eenmaal gebotteld is, verouderd hij niet meer.

- V.S.O.P. Very Superior Old Pale of Very Special Old Pale – Minstens 4,5 jaar gerijpt
- X.O. Extra Old, Extra, X.O, Napoléon – Minstens 6 jaar gerijpt
- Hors d’Age Minstens 10 jaar gerijpt
- Millésimé Bereid van één oogst (een referentiejaar)
- XO Premium Meer dan 20 jaar gerijpt
De aangename verrassing na de 80-jarige oorlog
In de 12e eeuw begonnen Nederlanders al met witte wijn – veelal uit de Charente-streek – te branden op zee. Ze brandden de alcohol eruit om vervolgens aan het drinkwater toe te voegen van de zeeschepen zodat het langer drinkbaar bleef en het vervoer goedkoper werd. Dat hadden ze in de Charente-streek ook door en in de loop der tijd vestigden zich hier distilleerderijen die hun wijndistillaten op fust naar Holland verscheepten. Tijdens de 80 jarige oorlog stagneerde de handel in het begin van de 17e eeuw; het distillaat bleef opgeslagen wachten op vervoer.
“Toen men na de oorlog rond 1640 in Nederland dit distillaat uiteindelijk proefde, werd ontdekt dat de eikenhouten fusten een uitzonderlijke werking op het distillaat had gehad en Cognac was geboren.”
Onze Cognac – de Makers
Al 5 generaties lang maakt familie Tercinier op authentieke wijze loepzuivere Cognac op het Domaine Des Forges.
