Wat is een escargot?
De escargot is een gekookte landslak en tevens de letterlijke vertaling van het woord slak naar het Frans. Oorspronkelijk een specialiteit uit de Franse keuken, en nog steeds in vele restaurants wereldwijd terug te vinden op de kaart.
Slakken leven over de hele wereld, zowel in het land als op het water. Het grootste deel leeft in de zee of in zoet water en een kleinere groep komen we tegen op het droge.
Je hebt ze zonder huisje en natuurlijk de bekende naaktslakken. Sommige gebruiken longen voor zuurstof, anderen weer kieuwen. En je hebt aaseters, planteneters, slakken die alleen dood organisch materiaal eten en er zijn zelfs jagende vleesetende slakken.
Kun je elke slak eten?
In principe wel, maar of het ook smaakt is een tweede. Voor de commerciële verkoop kun je een slak pas eten als de darmkanalen schoon (leeg) zijn en de slak zandvrij is. Kwekers voeren hun slakken voor de verkoop bijvoorbeeld meel, wat een lacterend effect geeft. Vervolgens gaan de slakken op rantsoen, trekken ze zich terug en sluiten hun huisje af. Zo zijn de slakken schoon en klaar voor consumptie.
Voedselbron voor iedereen
Het dient als een voedselbron voor vele diersoorten over de hele wereld inclusief de mens. Waar dieren geen onderscheid maken is de mens toch wat kieskeuriger qua structuur en smaak.
Er zijn ongeveer twintig Europese slakkensoorten die worden gegeten in restaurants en ze worden nog steeds gezien als een delicatesse. Er zijn natuurlijk nog veel meer soorten die de menukaart niet halen, maar wel bij mensen thuis in de pan belanden. Meestal zijn deze gewoon uit eigen tuin gevangen.

- Escargot Petit-Gris (Helix Aspersa Muller)
- Escargot Gros-Gris (Helix Asperga Maxima)
- Turkse Segrijn-Escargot (Helix Lucorum)
Taaie jongens
600 miljoen jaar geleden zijn de eerste herkenbare slakken teruggevonden. Ze hebben dus vele destructieve situaties weten te overleven en zijn alle kanten op geëvalueerd. Al in de prehistorie was het een delicatesse voor de elite. In de Middeleeuwen werden de slakken vooral door monniken in grote hoeveelheden gekweekt, omdat wijngaardslakken niet werden meegerekend als voedsel tijdens het vasten.
In een van de allereerste kookboeken ‘Ménagerie de Paris’ schreef een Franse cuisinier in 1393: “De escargotsoep is voor de armen, De kleine huisjesslakken in olie gefrituurd was voorbehouden aan de rijken”.
Escargots als superfood
Escargots zijn caloriearm, zitten bomvol eiwit en zijn rijk aan calcium, ijzer en mineralen. Als er duurzaam, biologisch en dus ambachtelijk gewerkt wordt is er ook in het kweekproces nauwelijks tot geen belasting voor het milieu.

Het witte kaviaar: parels van Frankrijk
De kaviaar van slakkeneieren wordt “Caviar d’escargot” of “Witte Kaviaar” genoemd in Frankrijk. De commerciële naam is “Perles de France” of een afgeleide hiervan. Per keer levert de slak 4 gram sneeuwkleurige eitjes.
Het oogsten en prepareren van deze eitjes is een heel werk. Stuk voor stuk, worden ze geselecteerd op grootte, vorm en kleur. Daarna worden ze behandeld en verpakt onder optimale omstandigheden. Dit intensieve klusje is natuurlijk wel kostbaar: je betaalt ongeveer €1500 of meer per kilo.
